You do not need the language of specialty coffee before ordering at Akoma. Start with what you already enjoy. Tell us whether your usual cup is smooth, bold, bright, sweet or full of fruit. That gives us somewhere honest to begin.
Begin with the cup you know
Some customers want a familiar cup with chocolate or caramel character. Others enjoy a lively coffee with floral, citrus or berry notes. Neither choice is more sophisticated. The best cup is the one that makes you want another sip.
Tell us how you normally drink coffee, and we will help you choose without turning the conversation into a lecture.
Why we often recommend a pour over
Drip coffee is convenient, and we serve it. A pour over gives one coffee more room to speak. The water is added gradually, the cup is prepared for you and the aroma has time to open. That slower method can make differences in sweetness, body and finish easier to notice.
If you are curious about a particular bean, ask what is available that day. Coffee selections can change, and we would rather describe the cup in front of us than promise a flavor that is not on the bar.
Processing changes what reaches the cup
Before coffee is roasted, the fruit surrounding the seed has to be removed and the seed has to be dried. The method used during that stage can influence what you notice later.
Washed
Often cleaner and more defined, with acidity and individual notes that may be easier to separate.
Honey
Often sits between washed and natural, with rounded sweetness and a little more body. No honey is added.
Natural
Often fuller and more fruit forward, with berry, ripe fruit or wine like character depending on the coffee.
The conversation is part of the cup
Most customers do not walk in asking for a processing method. They tell us what they like, taste what is in the cup and begin connecting the flavor to the coffee. That moment of recognition is what makes coffee education useful.
